WThis is a simplified version of a beverage from our latest cocktail list. This is a party-sized prepared mix that is loaded with the tastes associated with festive period, rendering it excellent for hosting a holiday party. Save the extra cordial you can use for breakfast cocktails, desserts, or to mix more rounds of the drink.
The Bikini Cocktail
Yields 10 guests
For the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Put every items in a saucepan, bring to a light boil, agitating until the sugar dissolves. Then, take off the burner and let it to reach room temperature completely. Transfer into a sterilised bottle, cap it and refrigerate it chilled, where it will keep for up to one month.
To make Batch Mix: Mix every spirits and syrup into a big jug, let it rest for 60 minutes, then pass it through , ideally through muslin, so it's fully clarified.
When ready to serve: Measure 85ml of the premix into a stirring glass containing ice, gently stirring lightly for one minute until cold. Strain into a chilled martini glass or a similar vessel, decorate with the cranberries and complete it with a light spray of the essential oil above the glass.
